Ingredients:

  • 500g pork loin chops (or bone-in chops), salt, black pepper, sweet paprika, 30ml brandy, cooking oil
  • 1/2 onion (sliced), 3 cloves garlic (minced), 2 Dazzle apples (cut into chunks), 15g brown sugar
  • 2g cinnamon powder, 30ml brandy, 10ml apple cider vinegar, 1 tbsp Worcestershire sauce
  • 2 tsp Dijon mustard,10g butter, 200ml hot water, chopped parsley for garnish

Steps:

  1. Marinating the Pork Chops
    Prepare 500g of pork shoulder chops (or bone-in chops). Use a meat tenderizer to even out the thickness. Season generously with salt, black pepper, and paprika. Seal and refrigerate overnight (at least 6 hours).
  2. Searing the Pork Chops
    Bring the marinated pork chops to room temperature. Heat a pan and add cooking oil. Sear the chops on one side until browned, then flip. Add 30ml of brandy, carefully ignite to evaporate the alcohol until the flame disappears, removing the micros and leaving the aroma.
  3. Sautéing Vegetables and Apples
    In the same pan, add half a sliced onion and 3 minced garlic cloves. Sauté until the onion softens and becomes fragrant. Add 2 diced Dazzle apples, 15g brown sugar, and 2g cinnamon. Stir well. Add 30ml brandy and ignite to evaporate the alcohol. Add 10ml apple cider vinegar, 1 tablespoon Worcestershire sauce, and 2 teaspoons Dijon mustard. Stir to combine.
  4. Braising and Plating
    Return the seared pork chops to the pan. Add 10g butter for flavour. Pour in 200ml hot water, cover, and simmer on low heat for 15 minutes. Uncover, increase the heat, and reduce the sauce, continuously basting the pork chops and apples with the sauce. Garnish with chopped parsley.

Which self-respected host provides a main dish like this without also thinking about a dessert? Well, don't we have an option for you--Cinnamon Butter Oat Baked Apple with Ice Cream

Ingredients:

  • 4 Dazzle apples, stuffing (50g rolled oats, 30g plain flour, 3g cinnamon powder, 20g brown sugar, 1g sea salt, 30g chopped pistachios, 60g butter)
  • 4 small pieces of butter for decoration, a suitable amount of vanilla ice cream, a suitable amount of caramel sauce, a suitable amount of thyme

Steps:

  1. Preparation
    Cut off the top 1/5 of a New Zealand Dazzle apple and scoop out some flesh to form a bowl.
  2. Making the Filling
    Mix 50g oats, 30g plain flour, 3g cinnamon, 20g brown sugar, 1g sea salt, and 30g chopped pecans. Add 60g butter and mix until crumbly.
  3. Assembling & Baking
    Stuff the filling into the apples, pressing down firmly. Place in a preheated oven at 200°C and bake for 40 minutes. Midway, add a small piece of butter on top of each apple. Close the oven and continue baking until done.
  4. Decorating & Serving
    After baking, top each apple with a scoop of vanilla ice cream, drizzle with caramel sauce, garnish with thyme, and serve warm.
